The demand for biosurfactants (BS) produced by yeast use in industrial processes and products is increasing. Therefore, there has been an increase the number of publications related to characterization surfactant compounds yeasts generally recognized as safe (GRAS), which enabled their application several industries, including pharmaceutical food industries. However, some these studies techniques that are not accurate or no longer essential because advancements new technologies. Given importance potential produce BS, this study reviews production BS microorganism most recent applications BS. It also critically a wide range used screening BS-producing strains, well those recovery, purification, yeasts. This review introduces diverse methodologies indispensable effort advance design, synthesis, perspectives research overcome obstacles present field.
